Wild Rice & Quinoa Soup

This soup is the ultimate combination of flavor and good quality nutrition. It provides a good source of complex carbohydrates, fiber, protein, and an assortment of vitamins and minerals. This soup is delicious, nutritious, and will make you excited for leftovers.

 1 tbsp olive, sunflower, grapeseed, or other cooking oil
 ½ medium zucchini, chopped (or cucumber)
 1 cup onion, chopped
 1 ½ garlic cloves, minced
 1 ¼ carrots, chopped
 2 celery stalk, chopped
 5 cups water
 1 lb chicken (can use chicken, beef or vegetable broth instead of water and chicken)
 ½ (14.5 ounce) can diced tomatoes with juice
 ½ tsp brown sugar
 2 tbsp salt

In a large stockpot, heat oil on medium heat. Sauté onions, garlic, carrots, celery, with parsley, curry and paprika adding salt and pepper.

Add water and chicken stirring in remaining ingredients including beans, wild rice, lentils and Quinoa. Bring to a covered boil, then reduce heat, and simmer over for approx. 45 minutes then serve.
