Spinach & Mustard Seed Salad

Enjoy colorful vegetables sautéed together with heart-healthy oil and mustard seeds for maximum flavor and nutrition. This dish is loaded with vitamins and minerals like vitamin C, vitamin A, vitamin K, folate, iron, and selenium, and is packed with disease-fighting phytochemicals.

 1 tbsp olive oil
 5 cups spinach
 ¼ cup red or yellow peppers
 ¼ cup red onion, sliced
 ¼ cup sea salt
 1 tbsp red wine vinegar

Precook whole oat groats.

In sauté pan heat oil.

Add red onion, peppers and mustard seed.

Add red onion, peppers and mustard seed.

Add cooked whole oat groats, and then add spinach.

Sauté until spinach shrinks to about half.

Remove from pan into a bowl, then sprinkle on top of salad with red wine vinegar.
