Curried Lentil Soup

This luscious and mild curry soup will tantalize your taste-buds. The wholesome ingredients combine to deliver a nutritious and high protein meal. The quinoa, lentils, flax, and vegetables provide a very high source of fiber, while the colourful sweet potatoes and carrots provide an excellent source of vitamin A. This soup will boost your iron with 50% of your recommended daily intake.

 1 tbsp Olive, sunflower, grapeseed, or other cooking oil
 1 Medium onion, diced
 2 Cloves garlic, minced
 10 cups Water
 2 lbs Chicken
 ½ cup Sweet potato, diced
 1 cup Carrots, diced
 ½ cup Celery, diced
 1 tsp Sea salt
 ¼ cup Carrot, grated
 3 tsp Fresh lemon juice

In a large pot, over medium heat, sauté onions in olive oil.

Add chicken and season with salt, pepper, curry powder and garlic.

Cook for 10-15 minutes stirring occasionally.

Add water, quinoa, large green lentils, carrots and flax meal.

Cook for 30 minutes

Add sweet potato, carrots, celery and grated carrot cooking for additional 15 minutes. Stir in lemon juice when done.
