Banana and Quinoa Pancakes

A breakfast just as tasty but even more nutritious. These nutrition-packed pancakes cook-up fluffy and golden and are a great start to any day. Quinoa provides all 9 essential amino acids, and the whole wheat flour provides an excellent source of fiber, while the bananas and applesauce supply some of your daily vitamin C. These pancakes even provide 16g of protein per serving!

 2 cups 100% whole wheat flour
 2 tsp Baking powder
 ½ tsp Baking soda
 ½ tsp Sea salt
 1 Egg, Beaten
 ½ cup Applesauce
 1 cup Buttermilk, or soured milk*
 1 qt Ripe banana, mashed
 1 tsp Vanilla

In a medium bowl, mix dry ingredients together.

In a separate bowl, whisk wet ingredients thoroughly.

Stir wet ingredients into dry, just until combined.

Cook by 1/2 cup measurements in a preheated, lightly greased frypan for 2-3 minutes until lightly browned.

* To sour milk, 1 1/2 tsp. fresh squeezed lemon juice or vinegar into milk.
