Wild Rice & Quinoa Soup

(Use organic ingredients whenever possible).

This soup is the ultimate combination of flavor and good quality nutrition. It provides a good source of complex carbohydrates, fiber, protein, and an assortment of vitamins and minerals. This soup is delicious, nutritious, and will make you excited for leftovers.

 

1 Tbsp. olive, sunflower, grapeseed, or other cooking oil

1/2 medium zucchini, chopped (or cucumber)

1 cup onion, chopped

1 1/2 garlic cloves, minced

1 1/4 cup carrots, chopped

1 celery stalk, chopped

3/4 teaspoon dried Willow Creek Organic Parsley

3/4 teaspoon Willow Creek Organic Curry Powder

1/2 teaspoon Willow Creek Organic Paprika

5 cups water

1 lbs. chicken (can use chicken, beef or vegetable broth instead of water and chicken)

1/2 cup Willow Creek Organic Quinoa

1/2 cup Willow Creek Organic Wild Rice

1/2 cup Willow Creek Organic Large Green Lentils

1/2 (14.5 ounce) can diced tomatoes with juice

1 1/2 Willow Creek Organic Bay Leaves

1/2 teaspoon brown sugar

1 cup Willow Creek Organic Red Kidney Beans

2 tsp. salt

1 tsp. Willow Creek Organic Pepper

 

*Cooking times can vary based on the batch size. 

In a large stockpot, heat oil on medium heat. Sauté onions, garlic, carrots, celery, with parsley, curry and paprika adding salt and pepper. 

Add water and chicken stirring in remaining ingredients including beans, wild rice, lentils and Quinoa. Bring to a covered boil, then reduce heat, and simmer over for approx. 45 minutes then serve.
