Three Lentil Spicy Meatless Patties

(Use organic ingredients whenever possible).

These vegetarian patties are sure to spice-up your regular meal repertoire. They are high in fiber, low in fat, and big on flavor. They also provide over 50% of your daily intake for vitamin C, along with other vitamins and minerals like folate, potassium, and magnesium.

 

1/3 cup Willow Creek Organic Three Lentil Mix

1/4 cup finely chopped purple, white, or green onion

1/4 cup finely chopped red, yellow or green pepper

1/4 – 1/2 tsp. salt (to taste)

1/4 tsp. Willow Creek Organic Ground Black Pepper

1/4 tsp. Willow Creek Organic Cayenne Pepper  or tabasco

1/3 cup water

1-2 tsp. olive, sunflower, grapeseed, or other cooking oil

 

*Cooking times can vary based on the batch size. 

In a medium bowl, combine Three Lentil Mix with salt, pepper, cayenne, red, yellow or green peppers and water.

Mix then let rest approx. 5 minutes or longer.

Divide portions of soaked lentil mixture into patties in buttered and heated non-stick fry pan.

Cook on medium to medium high heat until crispy brown (approx. 5 minutes) then flip patties and cook approx. 5 minutes more until ready to serve.
