Three Lentil Oat Muffins

This isn’t your average muffin! Jam-packed with wholesome ingredients like oats, lentils, dried fruit, and flax, this recipe is very high in fiber, a good source of iron, and delivers 11g of protein per muffin. Take these nutritious muffins anywhere for an energy-boosting snack or include them as part of your breakfast.

 

1/4 cup Willow Creek Organic Flax Oil   

2/3 cup brown sugar

1 egg, beaten

1/2 cup applesauce

1 cup buttermilk

zest of one orange

1/2 cup Willow Creek Organic Three Lentil Mix  

1/4 cup Willow Creek Organic Flax Meal  

2 1/2 cups Willow Creek Organic Thick Rolled Oats  

1 cup 100% whole wheat flour

1 Tbsp. baking powder

3/4 tsp. sea salt

2/3 cup dried cranberries (or sultanas, raisins or other dried fruit)

 

*Cooking times can vary based on the batch size. 

 

Preheat oven to 350°

Prepare muffin tin with muffin liners.

In a bowl combine sugar, egg, applesauce and buttermilk.

Beat Three Lentil Mix together with wet ingredients. 

Set aside for 5 minutes.

Mix 100% whole wheat flour, baking powder, and salt together.

Stir dry ingredients into wet just until combined.

Add cranberries.

Fill in muffin liners 3/4 full.  (This can also be used as a bread recipe)

Bake for 15-17 minutes.
