Greek Quinoa Salad

If you enjoy Greek salad, you will love this flavorful recipe! The addition of wholesome quinoa makes this salad a complete meal, as it provides a source of protein and all 9 essential amino acids. This colourful salad is loaded with nutrition, providing a source of fiber, healthy polyunsaturated fats, vitamin C, iron, and magnesium.

 

1 cup Willow Creek Organic Quinoa , rinsed and cooked

1/4 cup cucumber diced

1/4 cup tomato, diced

1/4 cup black olives, pitted and sliced

1/4 cup red onion, diced

1/2 cup feta cheese, crumbled

2 Tbsp. flat leaf Willow Creek Organic Parsley

Dressing:

Zest of one lemon

2 Tbsp. fresh lemon juice

3 Tbsp. Willow Creek Organic Flax Oil   

3/4 tsp. Willow Creek Organic Cumin

1/2 tsp. Willow Creek Organic Coriander

1/2 tsp. Willow Creek Organic Paprika

1 clove garlic, minced

 

*Cooking times can vary based on the batch size. 

Precook Quinoa before starting recipe.

Combine all salad ingredients in bowl.  

Whisk salad dressing together and toss with salad.

Refrigerate for one hour for flavors to combine, stirring twice.
