Black Bean Muffins

This recipe is the perfect balance between healthy eating and taste, and a great way to introduce nutrition to children. A great source of fiber from the black beans, flaxseed and 100% whole wheat flour while providing a source of Omega 3’s. They taste even better the next day!

 ½ cup cocoa powder
 ½ cup olive, sunflower, grapeseed, or other cooking oil
 1 cup brown sugar
 3 eggs
 1 cup 100% whole wheat flour
 ½ tsp salt
 ½ tsp baking powder
 1 cup water

Precook Black Beans before starting recipe

Puree cooked black beans, and then stir in cocoa, oil, sugar and eggs until well blended. Add water then stir in flour, salt baking powder. Grease muffin tin and pour in batter.

Bake at 350° degrees (320° degrees if using convection oven) for 25 minutes or until done.
